Meet Our Guests: Chef Brad


Who Is Chef Brad

Chef Brad Petersen is a native of Arizona. Born and raised in the White Mountains. He started his career early in the food business. By the age of 9 he was doing the majority of the cooking for his family. By the age of 12 he had started working in a local coffee shop as a busboy. He did that for several years, working his way around all parts of the restaurant business. By the age of 18 he was comfortable in all areas of the food and beverage industry. At the age of 19 he left the White Mountains to serve a mission in the Caribbean for two years. He loved the food there and spent as much time as he could learning the local recipes. The time spent in the Caribbean impacted his life, adding a wonderful Caribbean flair to his cooking and developing in him a love for the Spanish language and him latin brothers and sisters. After his mission he returned to the White Mountains for a brief time before he relocated to the Valley of the Sun. He dove into the restaurant business again doing all jobs from waiting on tables, bartending, banquets, cook, management, catering and consulting.  

He has gained an excellent reputation as a chef and is widely known for his knowledge of cooking with grains.  He is known as America’s Grain Guy,  He has a passion for teaching and education. He travels all over, teaching the many things he has learned about nutrition and health.

Currently, he travels as a motivational speaker, is spokes person for the Wondermix/Wondermill company, has filmed 40 shows for BYU TV network.  He has published several cookbooks, and has a on-line Health and Wellness Series, The Revolution.

Chef Brad’s love for grains and food has made him a leading authority on grains and the history of grains. He believes strongly that America is ready for a change and is starving for knowledge on how to eat better and be healthier. He believes strongly that almost all of the health problems we are faced with today are a result of our poor eating habits. His belief is that “healthy can taste great” and has proven that it can, time and time again. 

Chef Brad’s mission statement is: “To inspire people to get back into the kitchen and enjoy creating fond food memories eating healthy food that tastes great.”

Meet Our Guests: Shawn Olmstead


Shawn Olmstead is currently the head coach of the BYU Men’s Volleyball team; a position he has held since 2015. Prior to coaching the men, Coach Olmstead was the head coach of the BYU Women’s Volleyball team from 2011-2014. He was named the 2016 MPSF Coach of the Year and has led both the men’s and women’s teams to the national championship match on multiple occasions. He was raised in Carpentaria, served a mission Mendoza Argentina, graduated from BYU in Spanish with a Sociology minor and is married to Farrah Hofheins. They have four children.

  • Led BYU to a 26-5 (16-2 MPSF) record in 2017, winning a share of the conference regular-season title
  • Advanced his team to the national championship match of the NCAA tournament for a second-consecutive season in 2017
  • Coached four AVCA All-Americans in 2017: Jake Langlois, Brenden Sander, Price Jarman and Leo Durkin
  • Led BYU to a 27-4 (19-3 MPSF) record in 2016, winning the outright conference title and tournament championship

  • Coached four 2016 AVCA All-Americans: Brenden Sander, Ben Patch, Jake Langlois and Leo Durkin

  • Collected his 100th win in four seasons
  • Named the AVCA Division I National Coach of the Year in 2014

  • Led BYU to a 24-7 overall record in 2013, including a second-consecutive round of 16 NCAA tournament finish

  • Coached four All-Americans, including AVCA first teamer Jennifer Hamson, in 2012
  • Named 2012 West Coast Conference Coach of the Year and 2012 Pacific Region Coach of the Year

  • Led Cougars to 21-9 (10-6 WCC) season in 2011
  • Coached players to three all-conference honors, three academic all-conference honors, one all-region accolade and one AVCA All-America citation in 2011
  • Helped the team to a third-place finish in BYU’s first season in the West Coast Conference
  • Led the Cougars to their first 20-plus win season since 2007 in the 2011 season
  • Coached the team to a win against Utah in the 2011, 2012, 2013 and 2014 Deseret First Duel

Meet Our Guests: Garth Smith



Garth Smith is an LDS music artist specializing in original arrangements of the hymns.

He released his first album “Sacred Hymns” in 2014, and was shortly signed thereafter by RLegacy Entertainment in Salt Lake City, Utah. Garth has released two more albums since then, “How Beautiful Thy Temples in May 2015 and “Behold the Great Redeemer in September 2016. Garth is currently in the studio recording for an upcoming Christmas album “A Sacred Christmas” to be released at the end of 2017.

Garth’s albums have received critical acclaim from Deseret News, LDS Living and Meridian Magazines, and from respected LDS bloggers. His music is featured on the Mormon Channel, and the Garth Smith Channel on Pandora, Spotify, and YouTube.  Garth’s albums are found in Deseret Book and all major LDS music outlets. Garth was honored to have his “O Little Town of Bethlehem” arrangement selected by Bonneville International to be part of the 2016 #LIGHTtheWORLD Christmas campaign by the church.

Garth was born in Brigham City Utah. He served in the Arizona Holbrook Navajo speaking mission.Upon returning from his mission, he attended Brigham Young University where an inspired Bishop called him to team teach the marriage preparation class in his singles Ward with a beautiful young woman named Diane Pruyne (pronounced PRINE). The rest, as they say, is history.

All of the hymn arrangements that you will hear (tonight/today) are original arrangements by Garth.

Meet Our Guests: Chet Thomas


Chet Thomas grew up in the Midwest, served a mission in Salta, Argentina, and graduated from Brigham Young University. There he studied film and met his wife Angie and has 4 children.

He is a feature film producer and director. During his film career has worked in many different capacities on such films as Steven Spielberg’s Minority Report, Meet the Parents, Mouse Hunt, Small Soldiers, Saving Private Ryan among others.

Before becoming a producing partner with Gerald Molen at WhiteLight Entertainment, he worked with him on Steven Spielberg’s “Minority Report”. Prior to that, he worked at DreamWorks for several years, where he first served in the story department, collaborating on such projects as “Amistad”, “Deep Impact” and “Saving Private Ryan”. He quickly moved to feature development, where he played an active role assisting Jason Hoffs in the development of “Meet the Parents”, “Mouse Hunt”, “Road to Perdition”, “Small Soldiers” and several other films.

Most recently, he produced the film “TAKE”, starring Academy Award®-nominated actors Jeremy Renner and Minnie Driver, which has won many ‘Best of’ categories in festivals around the country. He is also a producer on the Walden Media film “The Best Christmas Pageant Ever.

For more than 10 years Chet has been producing and co- directing projects with Darrin Fletcher under the FletChet Entertainment banner. Over the last three years they has been working on a documentary and TV series that has taken them undercover, in the dark underworld of child slave trade. They have been able to help rescue children that have been kidnapped or forced into exploitation. They co-directed the Anti-Child Trafficking documentary “TheAbolitionists" and is currently executive producing and directing a television series on the same topic.

President Chet Thomas lives in Ojai and has 4 children. He loves serving in the church and especially working with the youth. His favorite callings have been serving as the Young Men’s President and as Bishop. He is currently serving as the 2nd Counselor in the Stake Presidency of the Ventura Stake.
